Birria Tacos

Birria Tacos are all the rage right now in the taco world. But what exactly are they? Birria tacos typically have braised, pulled meat (I prefer short ribs), and are placed inside shells that are also filled with cheese and then dipped and grilled. Now here’s the secret, the consume. Its a delish mix of fat and flavor that both bathes the taco before and after kissing the grill. I made the Birria tacos pictured above in January and the labor of love was well worth it.
